These are really rather special biscuits, made with a wholesome combination of candied and ground ginger, dark treacle, lots of butter and a little citrus peel. Comforting and warming, hearty yet decadent, their flavour is reminiscent of sticky Yorkshire Parkin only with a deeply satisfying and moreish crunch.

As happy at home on the family tea tray as they are on a fortifying hike across the moors or around the dales. Just don’t forget to take a flask.
